½ pound dried whole wheat penne
1 tablespoon minced garlic
2 tablespoons minced shallot
4 tablespoons butter
6 tablespoons extra-virgin olive oil
1 pound tail-on shrimp, peeled and deveined, 21–25 ct.
½ cup lemon juice
½ cup seafood stock
½ cup white wine
¼ cup chopped basil
¼ cup chopped parsley
½ cup ricotta cheese
Zest of 1 lemon, for garnish
Salt and pepper
1. In a large pot of boiling salted water, cook the pasta for 6 minutes.
2. While the pasta is cooking, in a large pot on medium high heat put the garlic, shallot, butter and olive oil. Sweat for 5 minutes, then add the shrimp and turn the heat to high. Season with salt and pepper and cook for another minute.
3. Add the lemon juice, seafood stock and white wine and reduce by half. Add the basil and parsley, then add the penne. Cook together for 2 minutes until flavors have combined and sauce has become creamy.
4. Fold in the ricotta cheese, adjust seasoning, and garnish with the fresh lemon zest.
